Need an easy Easter cocktail? I love bubbly fruity cocktails, so this Peep Mimosa is my go-to for an Easter breakfast or brunch cocktail.
 
Easter celebrations are so fun, springtime has finally arrived and everything is decorated in pinks and yellows. And this Easter pink drink fits perfectly for the theme.
 
Since Easter Sunday is a day to host a lavish brunch with friends and family, you’ll need an easy Easter mimosa to spruce up your cocktail offerings. You can relax a little knowing this Peeps mimosa only needs 3 ingredients and will be easy to make.
 
You also don’t need to save these just for an Easter cocktail. This pink lemonade mimosa can be served up all spring and summer, just change out the Peeps for a lemon slice.
 
 

What Kind of Champagne is Best for Mimosas?

 
The type of champagne (or sparkling wine) that’s best for mimosas is always a dry champagne. Because the fruit juice in a mimosa is sweet, you want to counter balance it with a less sweet champagne.
 
Look for a mid-priced champagne or sparkling wine labeled “Brut” to make your mimosas. Brut is a dryer champagne.
 
You can also use Prosecco or Cava. Both tend to have a slightly sweeter flavor, but a Brut Prosecco or Brut Cava will work perfectly for this Easter Mimosa recipe and it will only add a little extra sweet flavor.

How Much Champagne Goes in a Mimosa?

 
The standard is 1 part champagne to 1 part fruit juice.
 
But, honestly, I do like a little extra champagne in my mimosa. I personally use a little more champagne than the fruit juice.
 
Mix your  mimosa however it suits your tastes!

Thankfully, these Easter Mimosas are simple. Here’s what you’ll need:

CHAMPAGNE FLUTES: I’m a big fan of stemless champagne flutes. I love their elegance and let’s be honest…. I love that you can put more cocktail in them!

FESTIVE STRAWS: You’ll need these festive Easter straws to hold the Peeps.

 

Easter Mimosa Ingredients

This Peeps Mimosa has the perfect balance of sweet and tart for the perfectly delicious mimosa.

CHAMPAGNE: Use a Brut champagne, sparkling wine or Prosecco. Often, the best champagne is the one you enjoy the most.

PINK LEMONADE: I use pre-made pink lemonade from the grocery store. Simply Limeade with Strawberry, Minute Maid frozen pink lemonade or bottled are all good choices.

PINK AND YELLOW PEEPS: Garnish with yellow and pink Peeps to make it fun and festive! I did a mix and match of the yellow Peeps chicks and the pink Peeps bunnies.

How to Make an Easter Peeps Mimosa

Here’s the step-by-step directions for this easy recipe:

STEP 1: Fill your champagne flute about 1/2 full of pink lemonade.

STEP 2: Top with champagne (1/2 of the champagne flute).

Pouring champagne on top of pink lemonade in the champagne flute.

STEP 3: Add peeps for garnish. Use a festive straw to skewer 1 yellow peep and 1 pink peep.

STEP 4: Place the straw in each champagne flute. Now your guests can have a sweet nibble with their mimosa!

TIP: Use a knife to add a hole in the bottom of the peeps. I didn’t do this on the first round and it’s a little hard to get the marshmallow peeps to slide down the straws. The second batch, I used a knife to open a hole in the bottom and it was much easier.

Instructions
