To make a single serve drink, here are the measurements:
- 4 oz Pineapple juice
- 2 oz Light Rum
- 2 oz Ginger Ale
You can easily double this recipe in a small pitcher to serve two.
Directions:
- Fill a short cocktail glass with ice.
- Pour rum into the glass.
- Add pineapple juice.
- Top with ginger ale, filling the rest of glass. Stir.
- Garnish with pineapple chunks, a maraschino cherry and drink umbrella. Or simply place a pineapple wedge on the side of the glass.
Large Batch Recipe:
Want to make a large pitcher? It’s easier to serve a crowd when you can whip up a pitcher of pineapple rum punch and let guests serve themselves.
- 4 cups Pineapple Juice
- 2 cups Ginger Ale
- 2 cups White Rum
Directions:
In a pitcher combine all ingredients together:
- In a large pitcher add rum, add pineapple juice and add ginger ale together. Stir.
- Fill glasses with ice.
- Pour punch over the ice.
- Add a pineapple wedges and drop in a maraschino cherry for garnish
