Pineapple Strawberry Mimosa Cocktail

Sometimes you need something a little different than the plain ‘ol Mimosa! This Pineapple Strawberry Mimosa (Prosecco or Champagne) tastes fresh and refreshing plus it has more of an “escape to the islands” flavor.

Have you ever tried Prosecco wine? Very similar to Champagne. They are both “sparkling wines” but made with different grapes. Champagne is aged longer and Prosecco is a little fruitier, which makes it perfect for an island-style cocktail.

I have made this for my Sunday morning mimosa using dry champagne and it’s just as delightful.
