These easy Halloween cookies are wonderfully satisfying because each one uses two chocolate chip cookies along with a sweet creamy middle and crunchy sugar sprinkles.

I know everyone has an opinion on the texture of chocolate chip cookies. Are you a chewy or crunchy fan?

For this Halloween cookie recipe, the cookies start off soft and will harden over time. The sturdier cookie is good for this recipe because we want it to hold together well when eating. But, I’ve added a few variations in the ingredients and instructions for a slightly chewier recipe if that’s more your style.

Also, you can use this same Halloween cookies recipe for ANY holiday by simply changing out the color theme of the sprinkles. Don’t you just love an easy and versatile holiday dessert recipe? Oh yes!

You’ll need all the typical chocolate chip cookie ingredients: Flour, brown and white sugar, butter, egg, baking soda, salt and chocolate chips.

We’re aiming for a nice flat cookie that is sturdy enough to hold together when taking a bite after it’s stuffed. We don’t want the Halloween Chocolate Chip cookie to fall apart and leave you holding a handful of messy frosting.

For the stuffing, we use Vanilla Frosting and decorate the sides with black and orange sprinkles.

Ingredient Variations for Chewier Halloween Chocolate Chip Cookies

You can make this easy Halloween Cookie Recipe slightly chewier with a few tweaks to the ingredients. Again, I don’t suggest going for an ultra, ultra chewy cookie because you want the cookies to hold their shape when taking a bite!

You can tweak ingredients in one of the following ways for a slightly chewier cookie:

  • Add one extra egg yolk to the batter.
  • Substitute a small portion of the white sugar with more brown sugar. Brown sugar has more moisture in it.
  • Slightly underbake the cookies in the oven for 2 minutes and then let them slowly continue cooking by just sitting on the baking pan outside of the oven.

How To Make Halloween Chocolate Chip Cookies

You can make these easy homemade chocolate chips or skip it altogether and use your favorite brand of chocolate chip cookie dough. Let’s make this Halloween cookie recipe!

Here are the easy step-by-step directions.

Step 1: Combine flour, baking soda and salt in a large bowl. Set aside.

Step 2: Combine brown sugar, white sugar, butter, egg and vanilla. Mix until the ingredients are well blended.

Here’s how the well-blended ingredients should look – with a nice, even consistency.

Step 3: Go ahead and preheat the oven to 350 degrees F.

Step 4: Add the dry flour ingredients from the bowl you’ve set aside in step 1.

Stir in the ingredients together with a fork until everything is well blended together. It’s actually easier to slowly add the flour mixture and stir as you go.

Step 5: Add chocolate chips.

Fold the chocolate chips into the batter with a spatula or even a fork. Fold softly until the chocolate chips are completely mixed into the batter.

Step 6: Scoop about a tablespoon of cookie dough onto a baking pan and form a little ball. 

Make sure to either line the pan with parchment paper or use a really good non-stick pan.

Step 7: Bake for 10-12 minutes.

For slightly chewier chocolate chip cookies, bake for 10 minutes and remove from the oven. Then let them sit on the baking pan to continue slowly cooking in the middle.

Step 8: Add a thick layer of Vanilla frosting to every other cookie. Then take one of the un-frosted cookies and place on top of a frosted one to create the cookie sandwich.

Step 9: Add sprinkles to the edges of the frosting.

I find it easiest to just dip the sides into a bowl of mixed sprinkles until the frosting is fully covered. Although, you’ll waste a good portion of sprinkles unless you make several batches of these cookies. Alternatively, simply pinch a few sprinkles and pat them into the frosting.

How to Store Leftover Cookies

Place them in an airtight container for up to 3 days. Be sure to gently place them in the container without over stuffing it so the creamy middles don’t get pushed out.

These easy Halloween Cookies are fun and festive for the fall season. This homemade chocolate chip cookie recipe just needs a few extra ingredients to turn them into delightfully delicious Halloween Chocolate Chip Cookies.

Ingredients

  • 1 1/2 Cups All Purpose Flour
  • 1/4 Cup Brown Sugar
  • 1/2 Cup Butter (room temperature)
  • 1/2 Cup Sugar
  • 1 Egg
  • 1 Tablespoon Vanilla Extract
  • 1/4 Cup Chocolate Chips
  • 1/2 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • Vanilla Frosting
  • Colorful Sprinkles

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a mixing bowl, add flour, baking soda and salt. Set aside.
  3. In another large mixing bowl combine brown sugar, sugar and butter, egg and vanilla extract. Mix well.
  4. Slowly add in the flour mixture.
  5. Stir in chocolate chips.
  6. Make tablespoon sized balls and place on a nonstick pan or a parchment paper lined baking pan. Use a spoon to slightly flatten.
  7. Bake for 10-12 minutes.
  8. Remove from oven. Place on cooling rack.
  9. Once cookies have cooled, spread vanilla frosting on the inside of every other cookie.
  10. Place a cookie on top to make a cookie sandwich.
  11. Dip the edges into a bowl filled with sprinkles.
