Spicy Tuna Fish Cakes


Living the Beach Life – Living on a Boat – Relaxing around a pool? These quick and tasty cakes are perfect for a snack, sandwich or a beautiful meal paired with a bright salad.

Low carb and high protein – a healthy, no breading recipe.

Fresh Herbs are always the best way to make your dishes zing. If you don’t have fresh herbs, use dried or powder to taste.

Serves 2-4 people.

Ingredients

3 6oz cans of Tuna in water
1 Cup chopped water chestnuts or celery
1 tbsp. Grated fresh Ginger (powder if ya have it)
3-4 Green Onions chopped (set a little aside for garnish & sauce)
1 Chili Pepper seeded and chopped
2 Large eggs
1 Cup chopped fresh Parsley
1/2 Cup chopped fresh Sweet Basil
1/2 Cup chopped fresh Tarragon
1/4 Fresh Lime (save a little lime juice for making the sauce)
2 tbsp. Fish Sauce (usually found near soy sauce in the grocery store)
Olive Oil (to lightly drizzle the bottom of the frying pan)

Directions

Whisk eggs in a bowl.
Drain tuna well and add to bowl.
Add all other ingredients into the bowl.
Stir well, so all the herbs can make their magic work
Now grab your favorite frying pan – Lightly add Olive Oil or Oil of your choice to pan.
When ya can feel the heat, drop test to hear the sizzle and ya know its time to roll like a meatball and flattin’ out your Tuna Cake.
Lightly place the Tuna Cakes in the pan.
Use your eyes to judge when to flip. I flip when all my edges are golden brown like the edge of a quarter.  If you flip too soon, it will fall apart.  Wait for the golden edges.

Ingredients and Directions

In a small bowl add the following:
1 tbsp. sugar
2 tbsp. Fish Sauce
1 tbsp. Rice Wine or Red Wine Vinegar

Stir until the sugar is dissolved.
Add a big bunch of chopped Coriander or Parsley
Squeeze the left over Lime from the fish cake recipe into the sauce.  Let it marry and mate while you finish your fish cakes.

Plate 3-4 cakes with sauce in the center and lightly sprinkle your left over tidbits of green onion and parsley over cakes.
