Add diced chicken breasts and oil to skillet and cook until browned.
Add peppers, onions, corn, black beans, spinach and spices. Cook for 5 minutes.
Remove the mixture from the stove and stir in cheese.
Add 1-2 tablespoons of chicken and veggie mix to the middle of an egg roll wrapper.
Fold egg roll wrapper and seal edges with a few dabs of water. Follow the tutorial on how to easily wrap up an egg roll.
Air fry Southwest Egg Rolls for 6 minutes or until golden brown.
Serve with your favorite dipping sauce such as Ranch, Avocado Ranch or Salsa.
