Ingredients

All you need are a few simple ingredients to make 4th of July Brownie Bites:

BROWNIE MIX: You’ll also need the ingredients required on your brownie mix box as well as the 18oz box of brownie mix. This can vary from brand to brand and may vary more if you’re making your own homemade brownies mix. Most brownie mixes call for vegetable oil and eggs.

WHIPPED TOPPING: 8 ounces of Cool Whip or other whipped topping that’s been thawed. You can use regular or lite.

FRESH FRUIT: To make these fit the theme, I used fresh blueberries and sliced strawberries.

Instructions

STEP 1: Prepare the brownie batter according to the box recipe and instructions. Make sure the oven gets preheated appropriately.

STEP 2: Pour the batter into the muffin tin, filling each space only about a quarter of the way up. You don’t want muffin looking bites, more like brownie cookies.

TIP: You can use paper liners if desired for easier clean up.

STEP 3: Place the muffin tray into the preheated oven and bake according to the box instructions. Brownie bites are done when you insert a toothpick and it comes out clean.

STEP 4: Remove the brownies from the pan and let them cool on a wire rack for 5-10 minutes.

STEP 5: While cooling, wash your fresh fruits and slice strawberries. Pat dry the fruit with a paper towel to remove any excess moisture so the juices don’t bleed into the whipped topping.

STEP 6: Once they’ve cooled, frost brownies with a spoon by spreading small dollops of whipped topping on top.

STEP 7: Decorate these decadent brownies by adding sliced strawberries and blueberries.

 

Variations and Cool Ideas

This is such a versatile recipe,  you can spruce it up many different ways:

  • Make different patterns on your brownie bites with the fruit on each one. Then each 4th of July brownie bite will look unique!
  • Use specialty brownie box mixes. I think deluxe chocolate ones with extra chocolate chips or white chocolate chips would be amazing for this festive red white and blue dessert.
  • For an even creamier, more decadent dessert, whip some cream cheese in with the whipped topping to create a whipped topping cream cheese frosting.
  • Want to add more festive fun? Add some red and blue sprinkles or use red and blue chocolate melts and drizzle on top of each brownie bite.
  • Trade the strawberries for chilled raspberries or cherries.
  • Alternatively to the cupcake tin method, you could also make brownies in a regular baking dish and then use a small cookie cutter to cut them into small bites.
  • You can use a regular size muffin pan or a mini muffin pan to serve varying sizes.

 

How to Store Patriotic Brownie Bites

Remember that this recipe uses whipped topping that will melt the longer it sits out at room temperature.

The fresh fruit topping should be refrigerated also. So, once everyone is done enjoying some desserts, toss your leftover brownie bites into an airtight container and store them in the fridge for up to 2 days. This is the best way to help them last.

However, these delicious brownies are best enjoyed the same day that you make them, especially once you add the whipped topping and fruit.
