How to Make Grinch Crinkle Cookies
Preheat oven to 375 and line a baking sheet with parchment paper.
In a medium size bowl mix together flour, salt, and baking powder.
In a large bowl, use an electric mixer to cream together the room temperature butter and sugar. Ensure the wet ingredients are combined until they are light and fluffy.
Add the eggs, peppermint and vanilla extracts and eggs. Mix well.
In a separate bowl, mix together the dry ingredients: flour, salt, sugar, and baking powder.
Gradually add in the dry ingredients to the wet ingredients, mixing after each addition until fully incorporated.
Add a few drops of gel food coloring and knead the dough until the color is evenly distributed and the perfect shade of Grinch-green.
Place sugar in a bowl.
Scoop out the cookie dough in tablespoon-sized scoops, roll it into a ball, and then roll in the sugar to evenly coat all sides.
Then, place on your prepared cookie sheet.
Slightly flatten the dough ball and press a red candy heart shaped sprinkle into the center.
Bake for 8 minutes or until set. The bottom of the cookies should be very slightly golden brown.
Allow to cool on the baking sheet for 2-3 minutes before moving to a wire rack to cool completely.
Tips
- I recommend using a small cookie scoop to make sure all the cookies are evenly shaped.
- Allow the cookies to cool on the baking sheet for 1-2 minutes to keep their shape before moving to the cooling rack.
Variations
- You can use powdered sugar instead of rolling the dough in granulated sugar. Add the powdered sugar after baking the cookies.
- Don’t want to make cookies from scratch? Use a box of white cake mix to create these cake mix cookies. Then, simply add green food coloring to the cake mix cookie dough.
Can I Omit the Peppermint Extract?
Feel free to leave out the peppermint extract for a classic cake mix cookie flavor. Simply enjoy the sweet flavor from the vanilla extract and sugar in the cookies.
Can I Make these Cookies Ahead of Time?
Yes! If you want to make your cookies ahead of time, you can freeze the dough and then bake them when you’re ready to serve.
To freeze, place the cookie dough in plastic wrap and roll into a large ball. Or go ahead and use the cookie scoop to roll into individual dough balls for just tossing in the oven later to bake.
The dough will freeze for 3-4 months. Then thaw, shape, or place the premade balls on baking sheet and add a few additional minutes cook time to ensure the cookies are fully baked.
How to Store Leftovers
Any of the Grinch crinkle cookies you do not eat can be stored in a sealed airtight container at room temperature. The cookies will store well for up to 5 days. Or you can freeze these easy Grinch crinkle cookies for up to 6 months in the freezer. Then thaw on the counter when you are ready to eat them.
