One of the things I like about this recipe is that you can mix all the ingredients in the same bowl, which means fewer dishes to do and more time to enjoy my chewy s’mores cookies! 

  • Stand Mixer (or Electric Hand Mixer)
  • Large Mixing Bowl
  • Paddle Attachment
  • Measuring Cup and Spoons
  • Knife and Cutting Board
  • Spatula 
  • Cookie Sheet
  • Parchment Paper and Non-stick Spray
  • Cookie Scoop
  • Cooling Rack

Ingredients

Here’s all the ingredients you’ll need to bake these delicious cookies:

  • UNSALTED BUTTER
  • SUGAR
  • BROWN SUGAR – adds sweetness, but also more moisture to the cookies, which makes it a chewy cookie.
  • EGGS
  • VANILLA EXTRACT – make sure to use pure vanilla extract, not the imitation vanilla. The taste difference is very noticeable.
  • BAKING SODA
  • SALT
  • ALL-PURPOSE FLOUR
  • MINI MARSHMALLOWS: these bake inside the cookies, turning into gooey marshmallows. Save some for the top of the cookies too.
  • GRAHAM CRACKERS: use a sharp knife to roughly chopped up the graham crackers. Set aside some pieces for the top of the cookies.
  • HERSHEY MILK CHOCOLATE BAR: roughly chopped into pieces, or you can use semi-sweet chocolate chips. Again, set some aside for the top of each cookie.

How To Make S’mores Cookies

This gooey cookie will be your favorite cookie to make! Here are the step-by-step instructions:

Roughly chop Hershey bars and your graham crackers. Set aside.

Spray your cookie sheet with non-stick spray or cover it with parchment paper and still give it a light coating with non-stick spray.

In a large bowl, add butter, sugar and brown sugar. Beat at low speed with a paddle attachment until smooth.

Next, add in the eggs, vanilla extract, baking soda, and salt.

Then, mix the ingredients until everything is fully incorporated.

Next add in the flour, ½ cup at a time until well combined. You’ll want make sure there are no lumps in the batter.

Next, add the mini marshmallows, chopped graham crackers, and milk chocolate pieces (or chocolate chips). Be sure to set aside 32 pieces of each of these ingredients to add for topping at the end.

Fold them into the cookie dough with a silicone spatula until fully incorporated.

Preheat the oven to 375 degrees Fahrenheit. 

Use a cookie scoop to scoop out 3-4 tablespoons of dough. Place it onto your prepared baking sheet leaving approximately 2 inches of space between each cookie.

Bake the cookie dough balls for 10 minutes (baking time does vary between ovens, please watch closely on your first batch).

Pull them out of the oven and add 2 mini marshmallows, a few chopped pieces of chocolate and sprinkle with pieces of graham cracker on top of the cookie.

Continue to cook the s’mores cookies for 2 more minutes, or until the edges are slightly golden brown.

TIP: If your marshmallows need a little extra toasting, turn on the broiler for just long enough to toast them.

Place the the s’mores cookies on a cooling rack to keep them from continuing to cook while sitting on the hot baking sheet.  

 

Variations and Substitutions

Once you’ve mastered this easy s’mores cookie recipe, you can change it up with your very own variations and substitutions. Check out a few of my own fun twists below to get some ideas for how you can make this recipe even more fun.

  • Substitute the Hershey milk chocolate bar for a different kind of chocolate. You could use a white chocolate bar, chocolate peanut butter cups, Andes chocolate mints, or dark chocolate to change the flavor of the s’mores cookies.
  • Swap out the mini marshmallows for vegan marshmallows, peppermint-flavored marshmallows, or rainbow-colored marshmallows. Adding the peppermint-flavored marshmallows makes these cookies the perfect addition to a cup of hot s’mores chocolate!
